The reason why vegetarians have to spend a lot of time chewing is that they need to eat a lot of beans to get enough protein in absence of meat, while the phytates in all those beans stop the absorption of iron, zinc and magnesium. It is a similar story in wheat and rice. I remember 50 years ago when it was popular to eat brown rice instead of white rice because of the extra nutrients in the bran. It turns out that the ancients milled rice and wheat to remove the bran for a reason. They didn’t know why but they knew through empirical evidence that they should.
